While raising a family, I cooked a lot because, well, I had to. Now that everyone is older, I cook what and when I like. For this reason, sheet pan dishes catch my eye as did this recipe for Balsamic Chicken with Roasted Vegetables from SkinnyTaste.com. It’s filled with carrots, onions, red peppers, and other vegetables and seasoned with sage, rosemary, and balsamic vinegar. After combining and seasoning the ingredients, you simply put them on a cooking sheet and bake it in the oven.

Here’s another favorite, One-Pan Roasted Chicken and Carrots with onions and garlic. I add celery and sliced potatoes. It’s seasoned with olive oil, salt, pepper, a little Lawry’s seasoning if you like, and rosemary. YUM and done!
